Spring Minestrone Soup

This morning a recipe on Jamie's home page caught my eye and I couldn't get it out of my head until I made it. I already had a lot of the veggies on hand, but I bought a cauliflower and some zucchini to round them out, plus some frozen peas and broad beans. Sure, spring really hasn't sprung here, so nothing is local, but I can pretend. The sun was shining after all!

I don't own this book yet. It's on my list though, so when I get it I can check this one off. :)



It starts out with spring onions, garlic and fennel being sauteed in some olive oil, then you add the rest of the veggies (cauliflower, zucchini, asparagus, tomatos, peas and broad beans). It called for green & yellow beans but I will wait until those come down in price before I buy them again. I used the end of my homemade turkey stock from the freezer, and some mini shell pasta. I didn't have any pesto, but instead I topped it off with some fresh grated baby parmesan cheese. Very tasty and light.

For dinner tonight I made Jamie's Meatballs & Pasta recipe again. I used some whole wheat spaghetti for the kids, but roasted up a spaghetti squash for myself instead. I think I actually prefer the texture of it to real spaghetti!
