I had a small portion of corn left over from my dozen ears last weekend. I wanted to whip something up quickly this morning, to take to work for lunch. Checked my handy dandy Jamie Oliver Recipes app, and found this great recipe that originally calls for frozen corn.
287. Chile Corn Chowder (Jamie's Recipes iPhone App, 20-Minute Meals Vegetarian Pack)
I love this chowder recipe as it doesn't call for cream or milk of any kind. You basically have two pots going, one with your veggie stock heating up, the other with a bit of olive oil to saute some chopped onion, celery and red chile. Once the stock is simmering, add the leaves of a small bunch of thyme and one grated, peeled potato. After your veggies have softened in the other pot, add your corn kernels and season with salt a pepper. Then, add everything from your stock pot to the veggie pot and simmer for a couple of minutes. You can pulse with a hand blender if you want, but I opted to skip this step, as everyone was still asleep. ;)
The recipe calls for sour cream, chopped scallions, grated cheddar & chopped red chile as garnish. I skipped the cheese, substituted plain 0% greek yogurt for the sour cream, and brought a little baggie of scallions & chile to work. When the time came, I reheated my soup and garnished it at my desk. Wow! The garnish really adds kick to the already tasty soup. I had comments like "that smells good!" This is a great little soup to be able to make with left over corn and I will definitely be making it again.
