Evolution Tomato Salad

The August Food Revolution newsletter named this recipe as their recipe of the month.  Perfect timing since my tomatoes are ripening fast, and I have a ton of fresh basil in the garden to use up as well.

284.  Evolution Tomato Salad (Jamie's Food Revolution, page 113)


I love these evolution recipes, because they just give you a guideline of what you can do with a certain ingredient, and leave it up to you how far you want to take it.  This is the 4th of 5 of these recipes in the book....I've previously done the potato, cucumber, and carrot versions.

This time, I opted to do the basic first step, cutting up a variety of orange and red tomatoes from the garden, making a dressing out of olive oil and balsamic vinegar (I was out of red wine vinegar), and picking the leaves from some fresh basil.  I seasoned everything with salt and pepper.  I decided to skip step 2, since I don't like olives, and substituted some leftover garbanzo beans for the cannellini beans listed in step 3.  Step 4 looks awesome with the addition of tuna, but unfortunately I didn't have a can on hand.  Next time!



This was a nice, light, refreshing dinner, straight from the garden, just the way I like to eat.  :)
