Spicy Cod with Lemon Zucchini CousCous

Jamie has all the recipe packs for his online app on sale for half price this weekend, .  This one looked like lunch, so I bought it!

289.  Spicy Cod with Lemon Zucchini Couscous (Jamie's Recipes iPhone App, 20-Minute Meals Vol. 3 Pack)

I had some frozen white fish in the freezer, but it turned out to be sole not cod.  Still, I'm trying to eat my freezer right now, so I figured it wouldn't make much difference.  I defrosted it this morning, and substituted some left over strained tomatoes for the canned tomatoes called for in the recipe.  I loved that I could use up one of my garden fresh zucchinis for this too!

To start, I minced a clove of garlic, picked some cilantro from the garden, and removed the leaves.  I also finely chopped part of a very hot red chile.  I sauteed the cilantro stalks, half the garlic, and the chile in a little olive oil, and then added the tomatoes.  I let this simmer while I sauteed the remainder of the garlic in another pan, with some roughly chopped zucchini and onion, and a pinch of ground cumin.  I also poured some boiling water over a bowl of couscous and let this soak for a few minutes.  I added my fish to the simmering tomato sauce, and I combined my couscous with my veggies.  I seasoned both pans with salt and pepper, and added the juice of half a lemon to the couscous.

Finally, the rest of the tomato sauce, and a sprinkling of the cilantro leaves.  Voila, lunch!
 
 
 
 
I really enjoyed this.  I would never have thought to use tomato sauce with fish and/or couscous!  The spiciness of the chile really made it special.  It almost tasted like a quick curry......definitely something I'd make again.
