So, yesterday I thought I'd try out another of the iPhone app recipes. I took a walk to the store at lunch for some fresh cilantro, since there is none left in my garden. And when I got home, I found a visitor waiting for me on my front porch. She's 12, lives next door, and was locked out. Not to worry, I still carried on with my plans for dinner, despite her complaints about the smell of the spices! She busied herself with a large honeycrisp apple and watched me, for the most part.
295. Shrimp Korma with Pilau Rice (Jamie's Recipes iPhone App, 20 Min. Meals Vol. 2 pack)
This looked like something I'd love, and I was craving rice and shrimp. So I put two pots of rice on the boil....one with the spices to make a pilau, and the other plain for the kids. While that was cooking, I whizzed up onion, cilantro stalks and ginger in the processor, and got my visitor to help grind up cloves, cardamom, coriander seeds, dried red chile, cinnamon & salt in the pestle and mortar (while covering her nose with a towel).
I put some oil in a pan and cooked the spices, turmeric & a bay leaf with the onion mixture until soft, then added tomato paste and water and let simmer a bit longer. I added the shrimp & some beet greens (in place of spinach) just until the shrimp was cooked. Then, to make it into a korma, I added the ground almonds and yogurt, and seasoned with salt, pepper & lemon juice.
I topped it off with the cilantro leaves and a few dollops of yogurt. It was very authentic tasting. I was impressed with myself! And ended up with enough left overs for two lunches.

My little guest had a spoonful, said it tasted better than it smelled, then asked if she could have some dessert. LOL. Except that she hadn't really had any dinner. After refusing even plain rice, she settled on a pickle, tomato, cheese & mayo sandwich. Left to her own devices, I don't think this child eats much more than fruit & candy. Except McDonalds & Tim Hortons. It's kind of a sad situation, but try as I might, I can't seem to interest her in any cooking that doesn't involve sugar. She says I'm addicted to cooking! I say she's right, but there are sure worse things to be addicted to. ;)
One year ago, I was getting ready to take off on my Caribbean cruise!
Two years ago, I was making Chick Pea and Leek Soup.
