Pukkolla Revisited

My kids have been bugging me for weeks to tell them what I want for Christmas.  I was drawing a blank until I saw Jamie's amazing magazine subscription offer.  Ooooh, yes please!  :)  It will probably be February before I see any of it, but I'm still super excited!  I have never had a British edition of any of his cookbooks before, and it'll probably be almost a year until 15 Minute Meals is officially released in Canada anyways.  I am thrilled to finally have a subscription to the magazine...I usually browse the prior month's edition at Chapters every month (they are still displaying Sept/Oct 2012 right now) but it's usually outside of my budget to actually purchase it @ $12.00 a pop.  I tell you, if I lived in the UK......

This morning I was surfing around Jamie's website and came across these new winter breakfast videos.  How cute is little Buddy in the smoothie one?  But it was the overnight soaked muesli video that really peaked my interest.  Why?  Because it's pukkolla revisited!  Ha ha ha, he created it back when he was a whippersnapper, he says.  I decided to give it a try.  So, with no measuring whatsoever, I put maybe 2/3 of a cup of rolled oats in a container, covered them with milk, added a couple of tablespoons of plain yogurt, grated in a banana and a small apple (core included).  Then, I added some dried fruit that was kicking around the pantry, and put it in the fridge to soak overnight.




This morning, I topped it with some hazelnuts that were crushed in the pestle & mortar, some fresh (frozen) raspberries, and a drizzle of honey.  Looks like breakfast to me!  And there is enough for at least 2 or even 3 more bowls.  I love left overs.

Off to work I go (grumble, grumble).  Only 3 more days until I can get serious about Christmas.  I have done no baking and have not really planned my dinner menu yet.  That's the price I pay for driving more than 2500 kms across Canada & the US for the past two weeks! My tummy may be sore from all the rich restaurant food, but my heart is happy.

One year ago, I was experimenting with Chicken in Milk.  Garlic anyone?
Two years ago, I made Baked Camembert Pasta.  Mmmmm.
Three years ago, I made my first Thai Green Curry.  Delish!

  1. What a neat idea, I'll have to try this! I've done soaked waffles, from Passionate Homemaking. I've done my own soaked muffins. But I've never thought of muesli!
